Arugula Salad with Pears, Blue Cheese, Dates, and Walnuts
This little salad holds a special place in my heart. My best friend, Estelle, made it for me the last time I visited her in London, and I immediately fell in love. It’s the perfect balance of salty, sweet, crunchy, creamy, and bitter. What I love most about this salad, though, is how much it reminds me of Estelle—of that evening in London, watching her in the kitchen chopping and mixing; sitting on her couch eating dinner with a bottle of wine; watching Bridesmaids (her favorite movie) and trying not to spit out our food!
What makes a great recipe? You can taste your favorite memories in each bite.
This little salad also happens to be the easiest thing in the world to make. Simply throw the ingredients in a bowl, et voilà!
Arugula Salad with Pears, Walnuts, Dates, and Blue Cheese
arugula
thinly sliced pear
blue cheese (I use Saint Agur)
dates, pitted and chopped
walnuts, roughly chopped
extra virgin olive oil
balsamic vinegar (this one is my absolute favorite!)
salt and pepper to taste
I think it’s the perfect meal to bridge the (very large) gap between the seasons. It still has some weight to it—the Saint Agur blue cheese definitely grounds you in winter, while the sweetness of the dates and the crunch of the pears inspires a lightness that invokes spring. My point is this: it’s delicious and you should make it right now. Aller! Bon appetit!
