I think it’s important to revisit the flavors from your past—the tastes and textures that bring back happy memories and remind you of the experiences that shaped you growing up. I loved summers as a kid. I would spend hours outside digging in the dirt, making mud pies and picking veggies out of my mom’s garden. We always had a lot of cucumbers and I remember my mom, desperate to find a way to use the never-ending supply, making cucumber salad.
This recipe brings me right back to dinners on the patio and evenings running through the grass chasing lightening bugs. My mother’s cucumber salad was always a welcome relief from the summer heat. She tossed her cucumbers with a classic red wine vinaigrette, which I always loved. I tried something different by making a yogurt dill dressing and I really like the combination of the tang from the yogurt with the sweetness of the dill. It’s so refreshing! I also love the bite from the red onion. All of the flavors work perfectly together, and maybe it’s just me, but I find the crunch of the cucumbers immensely satisfying!
One bite of this salad and I drop right into the spirit of summer. It’s a breeze to throw together. I love it on its own, but it would also work well with almost anything. Hope you enjoy!
Cucumber Salad with Yogurt Dill Dressing
2 large cucumbers, thinly sliced
1/4 red onion, thinly sliced
Yogurt Dill Dressing
1/4 cup plain Greek yogurt
1 tablespoon extra virgin olive oil
1 tablespoon lemon juice
1 teaspoon chopped dill
salt + pepper to taste
Whisk your dressing in the same bowl you’re going to use for the salad. Add the cucumber and onion and toss! Note: This salad isn’t built to last in your fridge—the water from the cucumbers will break your dressing, so best to make and enjoy immediately!
